'This cracking rose is made from 100 per cent Syrah; it's bold and fruity yet still fresh and well-balanced. 'Andrew Neather, Evening Standard. Inspired by a pink Sicilian sunset, this wine has a light and attractive nose with notes of rose petals, pomegranate and strawberries. On the palate, the wine is silky smooth, light and fresh with no angularity and a beautiful finish. This wine has few limits: excellent as an aperitif, with light pasta dishes or even with fruit, fillet of grouper with tomatoes, spaghetti alla Norma, warm octopus and potato salad, pasta with fresh tuna and courgettes, sea-food, oysters, raw sword fish and sushi, salami made with black Nebrodi pork, fresh hard 'tuma' cheese. Deep straw yellow in colour with a green hue. Intense and full of character, with integrated aromatic notes of citrus and tropical fruit, white peach, pink grapefruit and wisteria. On the palate it has plenty of character with elegantly mineral elements. The acidity is well integrated with the fruit, making for a harmonious whole which is without a doubt one of the finest examples of this variety to be found anywhere on the planet. Intense red berry aromas, leathery and mineral notes. Good concentration on the palate, warm and very intense; tannins are still quite dense and firm; long finish, rich aromatic flavours. Perfectly balanced giving a harmonious result. Partners well with game, braised red meat, matured cheeses and cured pork. The grapes were destemmed and crushed before macerating for 15-18 days on the skins. Fermented at 28 degrees C and then aged for 12 months in 225 litre Allier oak barrels (1/ 2 new) the wine received a further 12 months in bottle before release.

Still very lively and fresh showing good citrus notes also hints of macadamia nut characters and beginnings of a light smokiness as a consequence of bottle development. Still a remarkably tight, zesty and youthful wine with a superb structure and length. Time in the bottle has deepened the lime citrus and honey dew fruit flavours which fill out the mouth while finishing clean and dry. With careful cellaring, this wine will continue to develop in the bottle for a further ten years.
