Gran Couva, vintage 2008, 64% cocoa, single estate bar

NEW The Valrhona Gran Couva 2008 vintage provides predominant flavours of roasted almonds, hazelnuts & notes of spice. Our own tastings detected a slightly more caramelised flavour compared with the 2007 vintage. Not as tart as the Ampamakia vintage, and less sweet than the Palmira vintage bar.

Fortissima, 80% cocoa, single origin bar

Pralus have used a blend of Criollo and Trinitario cocoa from Equador to create this robust, bitter flavoured, single origin chocolate. Slight acidity to the edge and perhaps surprising to many that this is an 80% dark chocolate.

Tanzanie, 75% cocoa, single origin bar

Balsamic, treacle and toffee apples all spring to mind with the abundance of caramalised and condensed sweet flavours contained inside this Pralus, single origin chocolate. Amazingly, Forastero cocoa, from Tanzania, alone is used to create such a flavoursome chocolate. A great credit to Pralus.

Caracas, 75% cocoa, single origin bar

Trinitario cocoa is used exclusively in this particular Venezuelan, single origin chocolate by Pralus, providing notes of sweet currant and hints of cinnamon. Fruits are dominant throughout this chocolate with very little bitterness or astringency. Perfectly balanced and palatable to all dark chocolate lovers.

Bresil, 75% cocoa, single origin bar

This single origin chocolate really does evolve from a grassy, earthy melt to a chocolate bursting with fruits, in particular Raspberry. An interesting journey of flavours ending with a perfectly balanced, well rounded chocolate for all tastes. Proof indeed that in the right hands the Forastero cocoa can be used successfully to produce a chocolate as good as this.

Dark chocolate coated cocoa nibs

These unique "Eclats de Cacao" are grown on the Los Ancones plantation in Santa Domingo, and as such provide a cocoa bean of exceptional, fruity flavour and not at all bitter as one sometimes finds with cocoa nibs. These cocoa beans are ground into fragments (nibs) and enrobed in fine dark chocolate of the highest Michel Cluizel quality. Exquisite.

Indonesie, 75% cocoa, single origin bar

Pralus have exclusively used fine flavour, Criollo cocoa from Indonesia to create this contrasting flavoured, single origin chocolate. Noticeable orange peel notes and high acidity to begin with evolving into a pure, liquorice and toffee finish.

This single origin chocolate is created solely from Trinitario, fine flavour cocoa. Peppery, spicy notes to begin with then mellowing into a more caramel flavoured chocolate with bitter cocoa notes.
